Sorry, could you clarify this part? Is your issue about direct debit payments or is your issue about card payments? In the former case (direct debits), regardless of any settings, you always have 5 days to reject/accept.
In the latter case (card payments), the credit/debit card networks are set up in such a way that customers don't have the possibility to reject/accept specific payments. Everyone that knows your card details is in the general case able to make payments from your account. That's why credit card fraud is such an issue sometimes. There are some extra security features like CVC codes and 3DS that might require the customer to give extra approval for a payment, but these aren't always obligatory depending on the merchant and the type of payment. But there's also an upside when it comes to credit card payments: because of the middle-man (the credit card company, Mastercard in case of bunq), it's easier to get a refund in case there really was a case of fraud. Keep in mind this refund procedure isn't always possible for debit card payments. Luckily, bunq offers a credit card.
And also bunq offers some advanced card security features compared to other banks: a rotating CVC code (not completely bullet-proof but helps against most types of regular card fraud) and the ability to freeze and unfreeze your card whenever you want. When a card is frozen, nobody is able to make payments from it. If you use the Easy Money or Easy Green plan, then you can also create virtual cards to use when shopping online. These are more easily disposable should you ever experience an issue with fraudulent payments and can help protect the card details of your physical card.
